Officially in business since November of 2003,
Classic Confections has been growing quickly!
Erin Sonntag, owner and pastry chef, entered the cake designing the business for herself in 2002. With previous experience working at the local Kroger Bakery, and also in her High School Culinary Arts Program, being around the kitchen became an everyday necessity. In 2003, Erin graduated from the Schoolcraft Culinary Arts Program in Livonia, Michigan. With her degree in Culinary Arts, her studies broadened into chocolate techniques and centerpieces, and French pastry art and design. In addition to her schooling, Erin has also interned under Pastry Chef Kim Sperl of Bella e Dolce, a renowned wedding cake designer for over hundreds of weddings on Mackinac Island, Michigan. Kim Sperl is a graduate of Le Cordon Bleu, Paris, and studied under Colette Peters and Ron Ben-Israel of New York. Erin learned her sugar paste flower techniques by studying Kim closely, from the simplest blossom to beautiful roses.
Classic Confections seems to be becoming a family business as well. With her mom, Katie close by, Erin has the most trustworthy of employees. Erin attributes all her creativity to her Mom, who has always said with a laugh, “I can’t cook, but I can make it look good!” Her father, Steve, has been very handy as well, “Whenever I have an order for cake that has a lot of angles, integral structure, or power tools are involved, I call Dad!” says Erin. Not to mention her fiance, Dan, who was a chef himself for seven years, Dan is extemely helpful when scaling ingredients, lifting the fifty pound bags of flour, and looks great sporting the Classic Confections’ apron at Bridal Shows! “Without all of them, I wouldn’t be where I am today. I am extremely grateful!”
